98er Brut Macedon

The eighth release of my hand crafted Macedon (Methode Champenoise) is predominantly Chardonnay with the balance Pinot Noir fruit. The wine consists of approx. 30% barrel aged ‘reserve’ wine 1990 – 1995, from the underground cellars at Cleveland (prior to my departure), blended for ‘Tirage’.  The style reflects the '98 season in its rich structure and intense yet delicate fruit. With minimal sugar doseage it continues the dry aperitif style I have established, but with more noticeable complexity from the reserve component and extended time on lees. After an eight-year process in underground cellars, the resultant wine shows a richness of palate, balance and length of finish, which reinforces the Silver Wings quality wine portfolio.

Colour:  Golden green with a persistent fine bead and mousse

Bouquet:  Strong yeast autolysis and aged complexities overlie rich citrus and ‘mineraly’ fruit characters

Palate:  Fresh, almost explosive effervescence leads complex fruit and creamy yeast characters with a rich and lengthy palate. There is a deep, complex texture to this zesty wine with over-riding elegance and finesse adding to a long and balanced finish.
