1993 Grand Reserve Brut X.O.

This hand crafted Vintage Grande Reserve Brut is my most limited production premium Methode Champenoise.  It comprises approx. 70% Chardonnay and 30% Pinot Noir and was tiraged on 15th March 1994.  Aged in underground cellars and remaining on lees for over ten years, it was disgorged and liqueured using  X.O. Cognac on June 30th 2004 and represents a most exclusive 'Hallmark' quality in aged, late disgorged styles.

Colour:  A deep golden/straw with a green hue, shows persistent fine bead creating a creamy mousse on the wine surface.

Bouquet:  A zesty bouquet of citrus and honeyed characters leads restrained fruit and elegant 'toasty' yeast with some aged complexities.

Palate:  Mouth-filling effervescence 'zipps' to finely structured flavours, with elegant Chardonnay fruit balancing some rich aged characters and deep yeast complexities. A fine acid finish combines with the X.O. Cognac and gives a nectar like delicacy to this rich wine.
